Texas Chili

Ingredients

  • 1 pound ground beef, browned and drained
  • 1/2 pound sliced eckridge sausage, browned and drained
  • 1 medium white onion
  • 1 green bell pepper diced
  • 2 cups chopped celery
  • 2 - 28 oz. cans diced tomatoes
  • 1 - 28 oz. can whole peeled tomatoes
  • 2 cups Walt Garrison BBQ Sauce
  • 2 tablespoons Walt Garrison BBQ Rub
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 - 14 1/2 oz. can pinto beans, drained and rinsed
  • 1 - 14 1/2 oz. can black beans, drained and rinsed
  • 1 package chili seasoning mix
  • Shredded Cheddar
  • Sour Cream
  • Chopped green onions

Instructions:


In a skillet, brown ground beef and sausage, drain and set aside. Place large pot over medium heat and slightly cover bottom with vegetable oil. Once the oil is hot, add the onion, green pepper and celery and sauté for 3 minutes. Stir in the diced and whole tomatoes. Add chili powder, cumin and Walt Garrison BBQ Rub and cook for 10 minutes. Add the beans, browned meat and chili seasoning. Partially cover and let simmer for 4 hours. After 4 hours, add Walt Garrison BBQ Sauce and cook for 10 minutes. Serve topped with Cheddar Cheese, sour cream and green onions.
